On Special - Grilled Chicken, Orzo and Arugula Salad

We know the cold, dreary weather and  holiday meals and leftovers have us all feeling weighted down and lethargic after eating so much. In turn we've created something that shies away from the heavy foods from this time of year.  For the time being, we will be offering a chicken, orzo, and arugula salad.  We toss grilled chicken with orzo, black lentils, grape tomato, red onion, red and green bell pepper and basil with our housemade balsamic vinaigrette dressing and top it with genuine reggiano parmesan.  

If you haven't caught on to the Mediterranean theme, we'll delve deeper into the ingredients:

Orzo is a form of short cut pasta shaped like a large grain of rice that is typically served in Mediterranean cuisine as part of a salad or cooked into casseroles.

Arugula is a peppery tasting plant that grows year round in the eastern Mediterranean countries.

Lentils are grown in pods within western Asia and eastern Europe and have the third highest protein content of any type of plant or nut and also have high fiber content. 

Unlike most of the other leftover meals of turkey and gravy are slowly adding to our winter weight gain, this is the right step forward in starting healthier eating this holiday season. This unseasonal dish is light enough for an easy lunch or elegant enough for a sit down dinner and a glass of wine. Either way we're sure you'll agree that this refreshing take on Mediterranean staples is the perfect way to remember that warmer weather is only around the corner.
