Victor Hugo Salad

This salad is an old Red Door Inn favorite. I've already had a dozen people tell me how wonderful the salad is and that it's just like they remember it.

Named after my Grandfather Victor and Uncle Hugo, this salad was a mainstay on the Red Door menu for years. My wife had posted a picture on Facebook when she tried this salad last week, and almost instantly, people replied to her with things like, "Victor is back in LaSalle-Peru!" No, she had to tell them, it's just the name of the salad.

While Victor may not be back, a taste of what he once created most certainly is. 

Our version of an old classic includes romaine hearts tossed with a creamy mustard vinaigrette dressing. Topped with hearts of palm and an artichoke heart, this salad also features housemade pickled asparagus and pickled shishito peppers.  Cherry tomatoes and hard boiled eggs complete the Red Door favorite.
