Marbled Pork Strip

We're all aware of the different cuts of meat. You've got your filets, chops, ribeyes, strips, and so on...

And when you think of a particular cut, you can usually associate it with beef, pork, chicken, or fish. But how often do you think of flipping the cut with the actual meat itself?

Just recently we received a generous amount of white marble farms pork. So of course we have to do something a little different with it:  introducing marbled pork strip!


Our chefs hand slice a generous 14 ounce pork strip and crust it with fresh fennel. It is then grilled to perfection and served with a housemade oyster mushroom-veal Demi glacé. It's a savory and earthy sauce that goes perfectly with a tender, juicy cut of meat that is extraordinarily marbled with beautiful fat.
